Mountain milk used comes exclusively from areas of protected origin (DOP); the area of production is Enego in the Asiago plateau. l'Asiago DOP Caseificio Finco Enego is a fresh cheese, it has a distinguishing mild, full-bodied taste thanks to the carefully selected ingredients. It has a soft, delicate texture and has a white or pale straw-like colour.
